Sofrito is a staple in Puerto Rican cooking. It is the base for most dishes. You won't find a Puerto Rican home without a jar or container of sofrito in the refrigerator. Although Sofrito isn't unique to Puerto Rican cooking it is something we absolutely cannot live without in our cuisine. Sofrito can be made in a variety of ways but for the beginner below you will find a simple Sofrito recipe.
Simple Sofrito/Sofrito Basico
1 head of garlic
1 onion
2 bunches of cilantro
1 red pepper
1 green pepper
Be sure to Wash and Rinse all of your produce. Pre-chop all of the vegetables into 1 inch pieces.
Add each ingredient one by one into a blender or food processor. You many need to use water if using a blender.
You can make individual Sofrito cubes by placing Sofrito into icu cube trays. Once the Sofrito cubes are frozen, you can put them in to freezer safe storage bags. This storage method makes sure your Sofrito lasts and it is easy to measure out the amount of Sofrito you need for a recipe. You can also store fresh Sofrito in your refrigerator in an airtight container. It will last approximately 1 week.
